Ingredients You’ll Need
- 1 (8-oz box) protein pasta (I used Pete’s Pasta – more options in recipe card)
- ½ tablespoon olive oil
- 2 garlic cloves
- 2 lemons
- 1 teaspoon red pepper flakes (optional)
- ¼ cup shredded Parmesan cheese
- Salt and Pepper
- 2 tablespoons chopped parsley (optional)
Instructions
Cook the pasta in accordance with the package's instructions, then strain and set it aside. Add the olive oil, garlic, lemon zest, and red pepper flakes to a large skillet. Stir frequently to prevent burning while cooking on medium heat until the garlic is barely softened and aromatic, which should take approximately five minutes. Reduce the temperature to low, incorporate the cooked pasta and lemon juice, and combine. Turn off the heat and remove the item from the hob. Add 2/3 of the cheese, mix together and taste the pasta, add any salt or pepper as required and blend again. Garnish with the remaining parsley and cheese.
Healthy Lemon Pasta Meal Prep and Storage
Meal Prep: This recipe is so quick there is no real reason to meal prep. But you could make a double batch, enjoy dinner and after add the remaining portions into meal prep containers for busy nights or quick lunches. Storage: Will hold in the fridge for 6 days. Reheating: Microwave for 1-2 minutes. Or add to a skillet, along with 3 tablespoons water, and cook on low heat about 5 minutes.
